It’s the season for marmalade making.
These bitter Seville Oranges make the perfect marmalade.
1.25kg Seville Oranges
3kg granulated sugar
6 pints of water
Remove the pips from the oranges & lemons
Put the pips in a muslin bag and tie to the jam pan handle.
Blitz the oranges & lemons in a food processor until roughly chopped (own preference).
Place in the jam pan with the water & simmer until soft, approx. 40 minutes.
Add the sugar and bring to the boil.
Test for setting after 15-20 minutes.
When set, skim and pour into jars whilst hot.
